we visited our 16th and 17th state together in two years (no, we're not addicted to travelling). however, we do love going places. seeing new things. trying new coffee shops, or finding local favorites in idaho. and that's what we found one saturday morning at a coffee shop in potato kingdom. did you know idaho hosts a potato festival every year in september? neither did I! But now that I do - added it to my bucket list. I love poratoes. like seriously love potatoes. I would eat potatoes for every meal all day long if I could. I suppose it's my irish heritage.
but we went to idaho and we ate potatoes. they were absolutely amazing. the potatoes in idaho hit different. trust me. we had a blast in idaho. we visited idaho falls, shoshone falls - known as the niagara falls of the west. the falls were beautiful, but the park... littered and overrated. we still made a blast of our day. we stopped along a bridge and saw some beautiful river rapids - I think it was part of the snake river. had lunch at a costco, got a little rained on and drove through many open farm roads.
a joy of free driving - stopping on the side of the road, in the middle of nowhere to swim in a hot spring. we drove by, saw cars stopped and I decided we had to know why. walked along wild flowers and bees, came over a little hill and bam - a natural hot spring. how incredible. and it was quite refreshing. we headed in to town, stopped at a local diner - which was packed! turns out there was a fair going on in town. we ordered all the potatoes we could and enjoy every delicious bite! we walked along the falls, saw the temple, and a few wedding photo shoots. we visited a local dairy farm, had a refreshing ice cream treat and oh, I made a new friend!!
